What's For Dinner?

Not only have I not posted anything in a while, I haven't posted any recipes.  I love to cook, but up until this past month, I was very sporadic about doing it.  We either ate a lot of fast food or grocery store frozen food, but since March 31, I've cooked all of our dinners at home, except four.  One of those nights, I was the only one home so I just ate leftovers, we took Lindsay to Olive Garden the night before she left for Italy, one night we ordered pizza, and one Sunday we just pot lucked it all day.  I'll post my menus at the end of the month.

Everytime I prepare a meal, I always intend to take a picture of the plate before I dig in, but I forget.  I would like to get in the habit of taking pictures each step of the way, but I'm usually running around crazy while I'm in the kitchen.  Thank goodness my kids are awesome about helping me out!

I remembered to take a picture before we ate last night so I could share pictures with the recipes.  We had Spicy Honey Glazed Chicken Thighs (and they were spicy!!), Twice Baked Potatoes, English Peas and Wheat Rolls.  I've been buying our rolls in bags of 12 at Wal-Mart, but I only prepare enough for each person to have one, except Ed...I always have 2 for him.  Not only does this cut down our carb intake (just a little), but it saves money!

Spicy Honey Glazed Chicken Thighs

1 package chicken thighs (8-9 come in the package) - I removed the skin
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon red pepper flakes
1 teaspoon chili powder (I used chipotle chili powder)
2 teaspoons paprika
2 teaspoons garlic powder
2 teaspoons seasoned salt
1/2 cup honey
2 tablespoons apple cider vinegar

Preheat oven broiler for 10 minutes.

Mix spices together and set aside.  Mix honey and cider vinegar and set aside.

Un-tuck chicken thighs so they are flat. Cover both sides in seasoning, set flat onto sheet pan. When all chicken as been seasoned put under broiler* (I put mine on the second rack just so I don’t worry about burning the chicken)
Cook for 5-7 minutes on one side and flip. Cook for a 5-7 minutes on other side. Flip again and then baste the chicken in honey/cider mixture. Be sure to really get the chicken covered. Add to oven again and let it cook under the broiler for a few minutes until the honey starts to thicken up and glaze. It may smoke a little but this is completely normal.
Take chicken out of oven and let rest for a few minutes before devouring. You don’t want to burn your mouth with all that hot honey glaze!
* If you have a gas oven and your broiler is at the bottom you can bake the chicken at 400 degrees for about 15 – 20 mins.

I cooked mine about 10 minutes on each side before glazing then another 10 minutes with the meaty side up after I glazed with the honey/cider mixture.  I like my chicken done!!
